Mango and White Chocolate Muffins


This is my recipe for Mango and White Chocolate Muffins, yum. They are healthy, great for kids lunch boxes and freeze really well. Make a couple of batches and but them in the freezer. They will freeze well for up to 3 months, now you can't get better than that!

125g butter, melted
2 1/2 cups of wholemeal self raising flour
1/2 cup of wheat germ
3/4 cup brown sugar
2 eggs, lightly beaten
1 cup of reduced fat milk
2 tablespoons of honey
1 tin of mango slices
1/2 cup of nestle white choc bits


Method:
1. Preheat oven to 180c lightly grease 12 x 1/2 cup muffin pans with cooking spray.
2. Sift flour into a large bowl. Add wheat germ, brown sugar and mix well.
3. Combine eggs, metled butter, milk and honey into a jug.
4. Add egg mixture, mango and white chocolate to flour mixture and gently mix. Spoon into muffin tray. Bake for 15-20 minutes
